Pure Bliss Desserts: A Taste of Happiness
I should admit, that we have a box of Pure Bliss in our fridge right now with a slice of cake and cheesecake that will be devoured before the day is done. Pure Bliss located at 1424 Cornwall Ave, Bellingham, WA 98225 has become a weekly pit-stop in our household. I opt for a cupcake and Chef gets a slice of cake in one of their many flavors.
This bakery shop or chic café that’s open late and family-friendly elegantly welcomes you to enjoy the delight of cakes, cookies, and cupcakes even if it isn’t a special occasion. Pure Bliss offers individual and whole desserts, a full espresso bar and pour over coffee plus beer, cider, and wine on tap. Even among all those offerings, we go for the desserts.
It’s rather interesting to me, because I never really liked cakes on birthdays, I always gravitated to the ice cream or anything else. However, Pure Bliss has one-hundred percent converted me and I always leave with a treat.
What makes their bakery stand out to me is balance of flavor. This bakery is not overly sweet. There is a spectrum of sweetness amongst their offerings but I’m not taking a bite and being flooded with just the taste of sugar. They also serve a variety of cakes by the slice that changes every time I visit. They’ll always have the staples, but there is a daily switch up that always draws my attention and makes it fun to visit. Plus, they offer monthly special flavors along with a daily rotation.
Their menu has 20 flavors of cakes, eight flavors of gourmet dessert wedges, cookies, cupcakes and more. They also have gluten-free, dairy-free and full vegan options. I’d recommend checking out their Instagram (@pureblissdesserts) where they regularly share their slice flavors of the day.
The space itself is atmospheric as well. White, pink, and black with script font on the walls informing you of their motto: “From Scratch. Small Batch. Locally Sourced.” Depending on the time of day you might struggle to find a seat and I’ll admit it can get loud and rowdy in there between families, pre-show Mount Baker Guests and general hubbub. So, it’s not always my favorite place to stay and eat at those busier times. Luckily, Pure Bliss has their to-go boxes dialed and getting a slice of cake or a Crème Brûlée to-go and enjoy at a local park is easy!
While you can order custom cakes, I’m obsessed with their Whole Dessert case, which Chef and I have selected whole cakes from many times to bring to friends and when visiting parents for holidays. Each whole cake is $50+ but I didn’t have to pre-order, I just walked in, admired my luck-of-the-draw and walked out with a perfect cake. We’ve also taken to just picking up slices and bringing those to gatherings and potluck style sharing the different flavors. Now anytime we visit anyone out of town they request Pure Bliss.
The only note I have about the Whole Dessert case is around any holiday or graduation times that case will empty quickly, so don’t delay if you’re the one in charge of desserts and you didn’t plan ahead.
Even if you don’t “do” desserts, Pure Bliss will convert you with a bite.
This bakery is easily one of my favorites because of it’s variety, flavors, the thoughtfulness of the staff, and care the bakers put into the desserts. Each time I go in, I’m wowed by the classy creativity that’s served. The only “downside” is they are closed on Sundays, which somehow is the day we always look at each other and say, “Let’s get cake,” only to realize they are closed.. But most days they are open at 11AM until 9PM — So, I can survive one day a week without cake and just plan ahead… Which is why I currently have a box of Pure Bliss in the fridge that I will now enjoy with coffee.
